Roasted Sweet Corn
This is the best recipe for the summer when native corn is available and it is a nice alternative when you don't want to serve corn on the cob. There are few ingredients so nothing overpowers the beautiful taste of the corn.
Ingredients
8 ears corn
6 tablespoons butter1 teaspoon seasoned salt
1/2 teaspoon black pepper1 teaspoon granulated garlic
4 scallions, sliced thin
Directions
Wrap each ear of corn in aluminum foil. Bake at 425 for 45 minutes. Remove from oven, remove foil, and cool for 20 minutes
Cut corn off the ears.
In a medium saute pan over medium heat, melt butter. Add corn, salt, pepper, garlic, and scallions to pan. Mix well. Reduce heat to medium low and cook for 30 minutes, stirring every 10 minutes.
