Roasted Butternut Squash
Ingredients
2 pounds butternut squash4 tablespoons butter
1 teaspoon salt1 teaspoon black pepper
Directions
Peel butternut squash, remove seeds, and cut into chunks.
Place squash on a baking sheet. Bake in a 375 degree oven for 45 minutes or until squash is cooked.
Place cooked squash in a large bowl. Add butter, salt and pepper. Mash contents of bowl until it has a smooth consistency.
