Confetti Corn
This is a great recipe for summer cookouts. When fresh corn is available, I use that instead of frozen corn. It takes a little more time since you need to cut the corn off the cob but it is worth it. Any leftover corn can be used in Shepard's Pie.
Ingredients
8 tablespoons butter
24 ounces frozen corn
1 1/2 red peppers, diced
4 scallions, sliced thin1 teaspoon seasoned salt
1/2 teaspoon black pepper1 teaspoon granulated garlic
Directions
In a medium saute pan over medium heat, melt butter. Add corn, peppers, scallions, salt, pepper, and garlic to pan. Mix well. Cook for 30 minutes, stirring frequently.
