Apple Butternut Squash
When I was growing up, butternut squash was always boiled and mashed. I never liked the texture of it so I tried roasting it instead. The flavor added from the roasting process, along with the addition of the apples, made a squash dish that was just a little different and very flavorful.
Ingredients
2 pounds butternut squash
3 apples4 tablespoons butter
1 tablespoon brown sugar
1/2 teaspoon salt1/2 teaspoon black pepper
Directions
Peel butternut squash, cut into 2 inch pieces, and remove seeds.
Peel apples, cut into quarters and remove seeds.
Place squash and apples on a baking sheet. Bake in a 375 degree oven for 25 minutes or until squash is cooked.
Place cooked squash and apples in a large bowl. Add butter, brown sugar, salt and pepper. Mash contents of bowl until it has a smooth consistency.
