Turkey Noodle Soup
Turkey Noodle Soup is a great recipe to make with the leftovers. It takes some time but it is easy to make and is so comforting.
Ingredients
Bones and skin from roasted turkey2 teaspoons poultry seasoning
3 teaspoons salt
2 teaspoons pepper
3 cups carrots, sliced
3 cups celery, sliced
3 cups cooked turkey3 cups uncooked egg noodles
Directions
Place bones and skin in a 5 quart pan. Add 3 1/2 quarts of water, poultry seasoning, salt and pepper to pan. Bring to a boil. Reduce heat to medium and simmer for 2 hours. Remove bones and skin from broth.
Add carrots and celery to broth. Cook for 25 minutes.
Cut turkey into bite size pieces. Add to broth.
Add noodles to broth. Stir the soup. Add additional salt and pepper as needed. Cook for 10 minutes.
