Seafood Tomato Soup
I was having friends who love seafood over for dinner. I was going to make chowder but I wanted to do something a little different with a variety of seafood. I was looking through the seafood section of the market and found the mixed seafood. It was the perfect choice.
Ingredients
1 small sweet onion, chopped
4 stalks celery, chopped
2 cups vegetable broth56 ounces diced tomatoes
2 teaspoons salt2 teaspoons ground black pepper
1 teaspoon granulated garlic1 pound frozen mixed seafood (calamari, mussels, and shrimp)
Directions
In 5 quart sauce pan, over medium heat, add onion, celery, broth. tomatoes, salt, pepper, and garlic. Bring to a boil. Reduce heat to medium low and cook, covered for 2 hours.
Remove from heat and blend, using a blender or an immersion blender, until smooth. Add seafood. Simmer on low for 15 minutes.
