Sausage Tortellini Soup
This is a hearty soup with the flavor of a homemade pasta dinner and can be served as a meal.
Ingredients
1 pound Italian sausage1 small sweet onion, chopped3 cups vegetable broth
3 cups beef broth
8 ounces tomato paste14 1/2 ounces fire roasted diced tomatoes1 tablespoon Italian seasoning
1 teaspoon minced garlic12 ounces cheese tortellini
4 cups escarole, chopped
Directions
In 5 quart sauce pan, over medium heat, add Italian sausage and onion. Cook for 5 - 8 minutes, breaking the meat up with a spoon, until browned and crumbled.
Add beef broth, vegetable broth, tomato paste, diced tomatoes, Italian seasoning and garlic to pan. Mix well. Simmer on low, covered for 2 hours.
Increase heat to medium. Add tortellini to pan and stir. Cook for 15 minutes of until tortellini is done.
Add escarole to pan and stir. Cook for 5 minutes.
Note: Either sweet or hot Italian sausage can be used.
