New England Clam Chowder
New England Clam Chowder is an extremely popular item in many Rhode Island restaurants. There are many types of clam chowder, such as white, red, and clear and most people have their favorite. Many of the best chowders have inspired cook-offs featuring some of the best recipes.
Ingredients
4 tablespoons butter1 cup diced onion1 cup diced celery
3 tablespoons flour1 1/2 quarts clam juice
2 large russet potatoes, cut into bite size pieces1 teaspoon salt1 teaspoon black pepper
1 pound chopped sea clams3/4 cup milk
2 teaspoons dill
Directions
In large sauce pan, over medium heat, melt butter. Add onions and celery. Cook for 15 minutes, stirring frequently. Add flour to pan. Mix until vegetables are coated with flour. Cook for 5 minutes.
Add clam juice, potatoes, salt and pepper to pan. Mix well. Cook for 10 minutes.
Add clams with their juice to pan. Mix well. Reduce heat to medium low and cook, covered, for 20 minutes.
Add milk and dill. Mix well. Cook uncovered for 10 minutes.
