Gazpacho
I made this to bring to a summer picnic. It was a very hot day and this was very light and refreshing.
Ingredients
1 English cucumber1 red pepper, stem and seeds removed
1 sweet onion
7 plum tomatoes, seeds removed1 garlic clove
1/4 cup olive oil1/8 cup rice wine vinegar2 1/2 cups tomato juice1 teaspoon salt
1/2 teaspoon pepper
Directions
Roughly chop cucumber, pepper, onion, tomatoes, and garlic. Place 1/2 of vegetable in a food processor and pulse 8 - 10 times. Repeat with second 1/2 of vegetables. Place chopped vegetables in a large bowl.
Add olive oil, vinegar, tomato juice, salt, and pepper to chopped vegetables. Mix well. Refrigerate for at least 2 hours.
