French Onion Soup
This is one of my favorite recipes. Many of the regulars at a pub I go to loved this soup. I would make this soup and put together French Onion Soup 'kits' for them. It was just enough for one bowl of soup with the croutons and swiss cheese.
Ingredients
8 tablespoons butter7 large sweet onions, about 4 lbs, sliced thin2 teaspoons ground black pepper3 tablespoons flour1 cup dry white wine
48 ounces beef broth1 tablespoon Worcestershire sauce8 ounces shredded swiss cheese8 slices french bread, 1/2 inch
Directions
In 5 quart sauce pan, melt butter on medium heat. Add onions and black pepper. Cook until translucent, 4 - 5 minutes. Sprinkle flour on onions and stir. Let cook for two minutes. Add wine and stir. Add broth and Worcestershire sauce. Stir then simmer on low heat for two hours.
Toast french bread. Ladle soup into 4 oven safe bowls. Put 2 slices of french bread on top of each bowl of soup. Top with shredded cheese. Bake at 425 until cheese is bubbly, about 10 minutes.
