Easy Tomato Soup
This is the tomato soup recipe I make when I am craving tomato soup but I don't have a lot of time to cook. I can get it started coooking while I am having my coffee in the morning and it will be ready for lunch. It is always nice to have a grilled cheese on the side.
Ingredients
2 tablespoons butter1 small sweet onion, chopped2 teaspoons granulated garlic56 ounces diced tomatoes1 cup chicken broth
3 teaspoons salt2 teaspoons ground black pepper1 tablespoon Italian seasoning1 teaspoon sugar1/2 cup milk
Directions
In 5 quart sauce pan, melt butter over medium heat. Add onion and garlic. Cook until translucent, 4 - 5 minutes. Add tomatoes, chicken broth, salt, pepper, Italian seasoning and sugar. Stir well. Reduce heat to medium low and simmer, covered, for 1 1/2 hours.
Remove from heat and blend, using a blender or an immersion blender, until smooth. Add milk and stir well. Simmer on low for 15 minutes.
