Creamy Chicken Corn Soup
This soup is so good and makes a great lunch or dinner. It is hearty, warm, and comforting. Serve it with some crusty bread and it is the perfect meal.
Ingredients
6 tablespoons butter1 small sweet onion, chopped
4 celery stalks, chopped
2 large carrots, chopped
1 teaspoon salt
1 teaspoon pepper1 teaspoon celery salt
2 teaspoons dried thyme
1/2 cup flour
2 quarts chicken stock
4 cups cooked chicken, cut into bite size pieces16 ounces corn1 cup half and half
4 ounces uncooked angel hair pasta, broken into 2 inch pieces
Directions
In 5 quart sauce pan, melt butter over medium heat. Add onion, celery and carrots. Cook for 15 minutes, stirring frequently. Place cooked vegetables in a food processor and pulse until finely chopped. Return vegetables to sauce pan.
Add salt, pepper, celery salt, thyme and flour to vegetable minture. Stir until flour is completely mixed with vegetables. Cook for 5 minutes over medium low. Add chicken stock and stir until everything is completely mixed. Cook on medium for 10 minutes.
Reduce heat to medium low. Add chicken, corn and half and half. Stir and cook covered for 20 minutes.
Add angel hair pasta, stir and cook for 10 minutes.
