Creamy Cabbage Soup
My neighbor gave me some fresh cabbage and leeks. It was very hot weather so a creamy vegetable soup sounded like a good idea for a light lunch on a hot day. I originally intended to add some cream but it didn't need it. I shared the soup with two of my vegetarian friends and they loved it.
Ingredients
1 small sweet onion, chopped2 carrots, chopped
6 stalks celery, chopped
2 leeks, sliced thin
1 small green cabbage
8 cups vegetable broth
1 teaspoon salt1 teaspoon ground black pepper
Directions
In 5 quart sauce pan, over medium heat, add onion, carrots, celery and leeks. Remove stem from cabbage and cut into 1 inch slices. Add cabbage, vegetable broth, sal, and pepper to pan. Bring to a boil. Reduce heat to medium low and simmer, covered, for 1 1/2 hours.
Remove from heat and blend, using a blender or an immersion blender, until smooth.
