Creamy Asparagus Soup
Asparagus is a great vegetable. I roast it, steam it, and saute it, but one of my favorite asparagus recipes is Creamy Asparagus Soup. It is one of my newer recipes and is a quick soup to make. If you want to reduce the fat, substitute the half and half with 2% milk.
Ingredients
2 pounds fresh asparagus1/2 teaspoon salt
1/2 teaspoon pepper1/2 teaspoon granulated garlic2 cups vegetable broth
3 teaspoons salt1 cup half and half
Directions
Remove ends from asparagus and discard. Cut asparagus spears into 2 inch pieces. Place asparagus into a 5 quart sauce pan. Add salt, pepper, granulated garlic and vegetable broth. Stir. Bring to a boil. Reduce heat to medium low and simmer, covered, for 15 minutes.
Remove from heat and blend, using a blender or an immersion blender, until smooth. Add half and half and blend for an additional 10 seconds. Simmer on low for 10 minutes.
