Clam Chowder
This is a much lighter version of the traditional New England Clam Chowder that I created when I was on a diet, wanted clam chowder, but couldn't afford the calories of the richer and creamier version. Even though it is low in calories and fat, it is still so flavorful.
Ingredients
1 tablespoon butter1 1/2 cups diced onion1 1/2 cups diced celery1 1/2 quarts clam juice
2 large russet potatoes, cut into bite size pieces1 teaspoon black pepper
1 1/2 pounds chopped sea clams
Directions
In large sauce pan, over medium heat, melt butter. Add onions and celery. Cook for 15 minutes, stirring frequently.
Add clam juice, potatoes, salt and pepper to pan. Mix well. Cook for 15 minutes.
Add clams with their juice to pan. Mix well. Reduce heat to medium low and cook, covered, for 20 minutes.
