Chicken Noodle Soup
Chicken noodle soup is the best comfort food. It is like medicine when you are sick. This recipe is not complicated but it does take hours to make and it is definitely worth the time spent. If you don't have the time, see my recipe for Rotisserie Chicken Noodle Soup.
Ingredients
4 split chicken breasts2 teaspoons poultry seasoning
3 teaspoons salt
2 teaspoons pepper
3 cups carrots, sliced
3 cups celery, sliced3 cups uncooked egg noodles
Directions
Roast chicken at 350 for 45 minutes, or until internal temperature is 140. Let cool. Remove chicken from bones and set aside. Place bones and skin in a 5 quart pan. Add 3 1/2 quarts of water, poultry seasoning, salt and pepper to pan. Bring to a boil. Reduce heat to medium and simmer for 2 hours. Remove bones and skin from broth.
Add carrots and celery to broth. Cook for 25 minutes.
Cut chicken into bite size pieces. Add 3 cups chicken to broth.
Add noodles to broth. Stir the soup. Add additional salt and pepper as needed. Cook for 10 minutes.
