Spinach and Rice
One of my favorite restaurants always has spinach and rice on the menu as a side dish and I would order it every time. I was planning a dinner party, and I thought spinach and rice would be a good addition to the menu, so I tried to recreate the recipe. This is the recipe I created but II used white and wild rice instead of just white rice.
Ingredients
1 tablespoon vegetable oil
16 ounces baby spinach
2 garlic cloves, finely minced
1 teaspoon seasoned salt
1 teaspoon pepper
1 1/2 cups long grain and wild rice mix
3 cups vegetable broth
Directions
In a large sauce pan, over medium heat, heat oil. Add spinach and cook for 5 - 10 minutes. Add garlic, salt, pepper, and rice to sauce pan. Mix well. Cook for 5 minutes.
Add vegetable broth. Mix well and bring to a boil, Reduce heat to low and cook, covered, for 25 to 30 minutes, or until water is completely absorbed.
