Spicy Tomato Pasta
This is a light and flavorful pasta dish that is a little spicy. It is perfect for a summer side dish, lunch, or dinner. To make it more of a meal, chop some summer vegeatable, such as zucchini or yellow squash, and add them to the pan with the onions.
Ingredients
2 tablespoons olive oil
1 small onion, finely chopped
10 ounces diced tomatoes with green chiles
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
2 cups vegetable broth8 ounces cut spaghetti1 cup grated parmesan cheese
Directions
In a large saucepan, melt butter over medium heat. Add onion and cook for 5 minutes, stirring occasionally. Add tomatoes, garlic, salt and pepper. Stir and cook for 5 minutes.
Increase heat to medium high. Add broth and cook until broth starts to boil. Add spaghetti to saucepan. Stir and cook for 10 minutes.
Reduce heat to medium low. Add parmesan, mix well, and cook for an additional 4 - 5 minutes.
