Spanish Rice
Ingredients
1 tablespoon vegetable oil1 red pepper, chopped
1/2 onion, chopped
14.5 ounces diced tomatoes1 teaspoon salt1/2 teaspoon pepper1 teaspoon cumin
2 teaspoons chili powder
4 cups vegetable broth
2 cups medium grain rice
Directions
In a large sauce pan, over medium heat, heat oil. Add red peppers and onions. Cook for 5 minutes.
Add tomatoes, salt, pepper, chili powder, and cumin to pan. Reduce heat to medium low and cook for 5 minutes.
Add vegetable broth to pan. Bring to a boil. Add rice to pan. Mix well. Reduce heat to medium low. Cook, covered, for 25 minutes.
