Scalloped Potatoes
Once in a while, Mom would make Scalloped Potatoes. While they were always good, her recipe needed a little more seasoning and a thicker sauce. I developed this recipe based upon Mom's recipe but kicked it up a little bit.
Ingredients
5 large russet potatoes, sliced thin
2 medium sweet onions, sliced thin6 tablespoons butter
4 tablespoons flour
2 cups milk
1 teaspoon salt1 teaspoon black pepper
Directions
In a medium saucepan, over medium heat, melt butter. Add flour and stir with a whisk. Cook for 3 - 5 minutes, stirring frequently, until flour mixture starts to thicken. Add milk, salt, and pepper, and stir with a whisk. Cook for 5 - 10 minutes, stirring frequently, until sauce starts to thicken.
In a 13 x 9 baking pan, place a layer of sliced potatoes. Place a layer of onions on top of the potatoes. Repeat layers 2 more times.
Pour milk mixture over the potatoes. Cover pan with foil. Bake at 350 for 45 minutes. Uncover and bake for another 20 minutes.
To change it up: Use both russet potatoes and sweet potatoes.
