Savory Sweet Potato Casserole
Ingredients
3 pounds sweet potatoes1 teaspoon salt1/4 teaspoon pepper1 cup milk2 tablespoons butter1 clove garlic, minced
1/2 cup thinly sliced green onion 1/2 cup old-fashioned rolled oats1/4cup chopped almonds1/3 cup panko bread crumbsΒΌ teaspoon dried thyme1/4 teaspoon salt1/4 teaspoon pepper2 tablespoons honey or maple syrup2 tablespoons olive oil
Directions
Preheat oven to 400. Bake sweet potatoes for 45 minutes or until fork tender. Let potatoes cool for 15 minutes.
Remove skins from sweet potatoes and discard. Place potatoes in a large bowl. Add salt, pepper, milk, butter, garlic and green onions. Mash until smooth. Place sweet potato mixture in a pie plate.
Reduce oven temperature to 375.
In a small bowl, mix oats, almond, bread crumbs, thyme, salt, pepper, honey and olive oil. Spread oat mixture over top of sweet potatoes. Bake for 15 minutes.
