Sausage and Bread Stuffing
My father made a sausage and bread stuffing every year for Thanksgiving. We only had this once a year and it was my favorite dish on the table. I wanted to recreate the recipe and reduce the calories. While this recipe is definitely not a diet dish, it isn't as decadent as the original.
Ingredients
6 tablespoons butter
1 sweet onion, diced
4 stalks celery, diced1 pound pork sausage roll
2 tablespoon poultry seasoning3 1/2 cups chicken broth24 ounces cubed bread stuffing mix1 cup water
Directions
In a large sauce pan, over medium heat, melt butter. Add onions and celery. Cook for 5 minutes, stirring occasionally, until onions are translucent. Add pork sausage, breaking up meat with a spoon until meat is browned and finely crumbled.
Add poultry seasoning and chicken broth. Mix well. Turn heat to high and bring to a boil.
Remove from heat, add stuffing mix and mix until bread is no longer dry. Add water as needed to moisten stuffing. Cover and let stand for 30 minutes.
An additional optional step: Place stuffing in a buttered 13 x 9 baking dish. Bake at 350 degrees for 30 minutes.
