Pesto Quinoa
Ingredients
1 cup quinoa, rinsed and drained2 cups vegetable broth2 tablespoons basil pesto1 cup cherry tomatoes, cut in half1 teaspoon salt½ teaspoon pepper
Directions
Cook quinoa, in vegetable broth, according to package directions.
Add pesto to the quinoa. Mix well. Add the tomatoes, salt and pepper into the mixture. Mix gently. Serve warm.
