Parmesan Orzo
Orzo is a great base for a pasta side dish. You can use the flavors that will complement your main dish. It can be as simple as salt, pepper, and garlic or chopped vegetables and cheese can be added. This recipe was created to go with Italian marinated grilled chicken.
Ingredients
4 tablespoons butter
1 small onion, finely chopped
2 cups orzo, uncooked
1/2 cup dry white wine
4 cups chicken broth1 bunch scallions, chopped1/2 cup grated parmesan cheese
Directions
In a large saucepan, melt butter over medium heat. Add onion and cook for 5 minutes, stirring occasionally. Add orzo and stir until orzo is coated with butter. Cook for 10 minutes, stirring frequently, until orzo is lightly toasted.
Add wine, stir and cook for 3 minutes. Add 1 cup of broth and cook until broth is absorbed into orzo. Repeat with remaining broth, 1 cup at a time. Test orzo to see if it is cooked. If it isn't, add a little more broth or water.
Add scallions and parmesan, mix well, and cook for an additional 4 - 5 minutes.
