Garlic and Parmesan Zucchini Noodles
Ingredients
2 tablespoons butter
1/2 small onion, finely chopped
2 garlic cloves, minced
16 ounces spiral cut zucchini
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup shredded parmesan cheese
Directions
In a large saute pan, melt butter over medium heat. Add onions to pan and cook for 3 - 4 minutes. Add garlic to pan and cook for one minute.
Add zucchini, salt, and pepper to pan. Mix well. Cook for 10 minutes.
Add parmesan cheese to pan. Mix well. Cook for 3 minutes
Note: You can also use yellow squash or butternut squash as a substitute. You can also make this dish with any combination of squash.
