Fried Rice
This fried rice contains lots of vegetables and is so easy to make at home since most of the vegetables are already chopped. It is one of my husband's favorite dishes which he likes more than getting takeout. One of my best meals is honey garlic chicken, with fried rice and eggrolls.
Ingredients
1 cup long grain white rice
2 cups water
2 tablespoons vegetable oil
1 small onion, chopped
6 ounces broccoli slaw
3 ounces shredded carrots
1 cup bean sprouts
1/2 teaspoon salt
1 teaspoon granulated garlic
3 tablespoons soy sauce
4 scallions, chopped
Directions
In a medium sauce pan, bring water to a boil. Add rice to pan, reduce heat to medium low, cover and cook for 20 minutes. Chill rice for at least 2 hours.
In a large saute pan, heat oil over medium high heat. Add onion, broccoli slaw, carrots and bean sprouts to pan. Cook, stirring frequently, for 8 - 10 minutes. Vegetables should be cooked but still a little crunchy.
Add rice to pan. Mix until rice is completely comined with vegetables. Add garlic, salt, soy sauce, and scallions to pan. Mix well. Cook, stirring frequently, for 5 minutes. Rice should be lightly browned.
