Corn and Tomato Rice Noodles
Ingredients
8 ounce package rice noodles
2 ears of corn
1/2 red pepper, chopped1 pint grape tomatoes, cut in half
3 scallions, chopped
1 cup shredded parmesan cheese
3 tablespoons olive oil
1/2 teaspoon granulated garlic
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
Cook rice noodles according to package directions. Rinse and set aside.
Cut corn kernels off the ears of corn.
In large saute pan, heat olive oil over medium heat. Add corn, red pepper, tomatoes, and scallions. Mix well. Cook for 5 miunutes.
Add rice noodles. Mix well. Add garlic, salt and pepper. Mix well. Turn off heat. Add parmesan cheese. Mix well.
