Broccoli and Cheese Orzo
Ingredients
4 tablespoons butter
2 cups orzo, uncooked
3/4 cup dry white wine2 cups fresh broccoli florettes
1 teaspoon seasoned salt
1/2 teaspoon pepper
1 teaspoon granulated garlic
3 cups chicken broth4 ounces shredded cheddar cheese
Directions
In a large saucepan, melt butter over medium heat. Add orzo and stir until orzo is coated with butter. Cook for 10 minutes, stirring frequently, until orzo is lightly toasted.
Add wine, stir and cook for 3 minutes. Add broccoli florettes, salt, pepper and garlic. Add 1 cup of broth and cook, stirring frequently, until broth is absorbed into orzo. Repeat with remaining broth, 1 cup at a time. Test orzo to see if it is completely cooked. If it isn't add a little more broth or water.
Add cheddar cheese, mix well, and cook for an additional 4 - 5 minutes.
