Black Beans with Chorizo
Ingredients
1 tablespoons vegetable oil
1 sweet onion, chopped
1 pound ground chorizo
29 ounces black beans, drained and rinsed2 teaspoons minced garlic
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup spicy brown mustard1/2 cup ketchup
1/2 cup maple syrup
Directions
In a large sauce pan, heat oil over medium heat. Add onions. Cook for 5 minutes, stirring occasionally, until onions are translucent. Add chorizo, breaking up meat with a spoon until meat is browned.
Add garlic, salt, pepper, mustard, ketchup, and maple syrup. Mix well. Reduce heat to medium low. Cover and simmer for 2 - 3 hours, stirring occasionally.
