Black Beans and Brown Rice
Ingredients
1 1/2 cups cooked brown rice15 ounces black beans, rinsed and drained1/2 onion, diced1 red pepper, diced
6 ounces baby spinach
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
Cook quinoa according to package directions. Set aside to cool.
In large bowl, add brown rice, black beans, onion, red pepper, spinach. Mix well.
Add cumin, chili powder, salt, and pepper to rice mixture. Mix well. Refrigerate for at least one hour.
