Bacon and Cheddar Twice Baked Potatoes
Ingredients
6 russet potatoes1 cup half and half3 tablespoons sour cream1 teaspoon seasoned salt1/2 teaspoon pepper
8 ounces shredded cheddar cheese6 slices bacon, cooked until crispy
Directions
In a 400 degree oven, bake potatoes for 45 minutes or until fork easily goes to center of potato. Cut in half lengthwise. Scoop out center of potatoes and place in a bowl. Place potato skins on a bakinng sheet.
Add half and half, sour cream, salt and pepper to potatoes in bowl. Mash with a potato masher until mixture is smooth and potatoes and milk are completely mixed together.
Crumbled two slices of bacon and add to potato mixture. Add 1/4 of the cheddar cheese to potato mixture. Mix gently with a spoon.
Add potato mixture into each of the potato skins. Place a piece of bacon on top of each potato. Sprinkle remaining cheddar cheese on top of potatoes. Bake at 350 for 25 minutes.
