Avocado and Bean Quinoa
Ingredients
1 cup quinoa15 ounces chickpeas, rinsed and drained15 ounces black beans, rinsed and drained1 ripe avocado, chopped1 pint grape tomatoes, cut in half
3 scallions, chopped
1 cup crumbled feta cheese2 tablespoons lemon juice
4 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
Cook quinoa according to package directions. Set aside to cool.
In large bowl, add quinoa, chickpeas, black beans, black beans, tomatoes, and scallions. Mix well.
In a small bowl, add lemon juice, olive oil, salt and pepper. Wisk for 30 seconds. Pour over quinoa. Mix well. Refrigerate for at least one hour.
