Apple Cornbread Stuffing
Ingredients
4 tablespoons butter
2 stalks celery, chopped2 Granny Smith apples, chopped1 1/2 cups vegetable broth6 ounces cornbread stuffing mix
Directions
In a large sauce pan, over medium heat, melt butter. Add celery and apples. Cook for 10 minutes, stirring occasionally.
Add vegetable broth. Mix well. Turn heat to high and bring to a boil.
Remove from heat, add stuffing mix and mix until bread is no longer dry. Cover and let stand for 30 minutes.
An additional optional step: Place stuffing in a buttered 13 x 9 baking dish. Bake at 350 degrees for 30 minutes.
