Yellow Rice with Clams
Ingredients
1 tablespoon vegetable oil2 medium red peppers, cut into bite size pieces1 large sweet onion, cut into bite size pieces1 tablespoon minced garlic1/2 pound ground chorizo
14 ounces diced tomatoes, with juice3 cups water14 ounces yellow rice mix, uncooked1/2 teaspoon ground black pepper16 ounces fresh chopped clams, with juice
Directions
In large saucepan, heat oil over medium heat. Add peppers, onions and garlic. Cook for 5 minutes. Add chorizo and cook for 5 minutes. Add tomatoes with juice and cook for 5 minutes. Add water, rice, and black pepper. Mix well and bring to a boil. Reduce heat to medium low, cover and cook for 20 minutes.
Add clams and juice, mix well and cook for 8 minutes. Remove cover, remove from heat and let stand for 5 minutes.
