Vegetable Baked Cod
This is a great dish to make when fresh native tomatoes are available. It is light and fresh, with great flavor from the onions and tomatoes. This recipe doesn't take much time to prepare and with a couple of light sides, such as rice pilaf and sauteed spinach, it makes the prefect summer meal.
Ingredients
4 (6 ounce) cod loins
4 teaspoons lemon juice
8 thin onion slices
12 tomato slices
1 teaspoon granulated garlic
1 teaspoon salt
1 teaspoon pepper
Directions
Place cod in a baking dish.
Sprinkle 1 teaspoon lemon on each cod loin.
Place 2 onion slices on each cod loin. Place 3 tomato slices on top of onion slices. Sprinkle tomatoes with garlic, salt, and pepper.
Bake at 375 for 25 - 30 minutes.
