Seafood Casserole
Ingredients
4 pounds shrimp, peeled and deveined1 pound chopped sea clams1 pound bay scallops1 pound flake style imitation crabmeat8 tablespoons butter1 teaspoon salt
1 teaspoon ground black pepper1 teaspoon granulated garlic1 cup dry white wine or sherry2 sleeves Ritz crackers, crushed3/4 cup panko bread crumbsseasoned salt
Directions
In a 13 x 9 baking dish, place shrimp, clams, scallops and crabmeat. Gently mix.
In a medium sauce pan, over medium heat, melt butter. Add salt, black pepper, garlic, juice from clams and wine. Stir and cook on medium heat for 5 minutes. Add crackers and mix until crackers are no longer dry.
Spread cracker mixture on top seafood. Bake at 375 for 30 minutes.
Mix cracker mixture into seafood. Sprinkle panko bread crumbs on top. Lightly sprinkle seasoned salt on top of panko. Bake for another 15 - 20 minutes or until shrimp is cooked.
