Salmon Asparagus Pie
This is my ultimate comfort food meal. I love the combination of salmon, asparagus, and mashed potatoes and this combines all those ingredients into one dish.
Ingredients
1 pound fresh salmon, skin removed16 asparagus spears, cut into 1/4 inch slices2 1/2 cups mashed potatoes1 teaspoons poultry seasoning1 teaspoon salt1/2 teaspoon ground black pepper2 pie crusts
Directions
In a large saute pan, poach salmon in 1 cup of water, for 10 mintes or until is easily flakes.
In a small sauce pan, bring 2 cups of water to a boil. Add asparagus, reduce heat to medium high, and cook for 8 minutes.
In a large bowl, add mashed potatoes and asparagus. Mix well. Flake salmon with a fork and add to potatoes. Add poultry seasoning, salt and pepper. Mix well.
Place 1 pie crust into 9 inch pie plate. Add salmon and potato mixture. Spread evenly. Place 2nd pie crust on top of salmon and potato mixture. Crimp edges and make 8 slits in the top crust. Bake at 375 for 45 minutes. Serve with hollandaise sauce.
