Paella
Ingredients
1 tablespoon vegetable oil
4 ounces boneless, skinless chicken thighs, cut into bite size pieces
8 ounces chorizo, sliced thin
1 red pepper, chopped
1 small sweet onion, chopped
1/2 teaspoon ground black pepper
2 garlic cloves, minced
1 1/2 cups medium grain rice
1 cup dry white wine3 cups chicken broth
15 1/2 ounces diced tomatoes
1 cup peas
1 pound shrimp, peeled and deveined
1 pound mussels, scrubbed and debearded
12 littleneck clams
Directions
In a large sauce pan, over medium high heat, heat oil. Add chicken, red peppers, and onions. Stir and cook for 5 minutes. Add chorizo, pepper, and garlic. Stir and cook for 5 minutes.
Add rice, wine, chicken broth, and diced tomatoes. Mix well. Bring to a boil. Reduce heat to medium low. Cook fo 10 minutes, covered.
Place rice mixture in a paella pan or a roasting pan. Add peas, shrimp to pan. Mix well. Place mussels and clams on top. Bake at 350 for 30 to 45 minutes, or until rice is cooked and shellfish has opened. Discard any un-opened shells.
