Lobster Tails with Crabmeat Stuffing
This recipe was created for a Valentine's dinner that we eventually were able to enjoy a week after Valentine's Day. I had trouble getting the lobster tails. It took three times going to the same store to finally get them. It was still a special dinner.
Ingredients
4 tablespoons butter
8 tablespoons dry sherry
1 teaspoon granulated garlic
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 sleeve round butter crackers
8 ounces crabmeat
4 lobster tails
Directions
In a small sauce pan, over medium heat, melt butter. Add sherry and granulated garlic, salt, and pepper. Stir. Cook for 5 minutes. Remove from heat.
Crush crackers until they are a fine powder. Add crackers and bread crumbs to butter. Mix until cracker crumbs are completely mixed with the butter. Add crabmeat to cracker mixture. Mix until crabmeat is completely mixed with crackers.
Place lobster tails in a baking dish.
Place 1/4 of crabmeat stuffing on each lobster tail. Bake at 375 for 20 minutes.
