Jambalaya
Ingredients
2 tablespoons olive oil
1 medium onion, chopped
1 green pepper, chopped
1 red pepper, chopped
3 stalks celery, chopped
2 garlic cloves, peeled and finely minced
1 1/2 teaspoons cayenne pepper
12 ounces Andouille sausage, cut into 1/8 inch slices
8 ounces boneless chickend breast, cut into bite size pieces
29 ounces diced canned tomatoes, undrained
2 cups long grain rice
3 cups chicken broth
2 pounds shrimp, peeled and deveinedSalt and pepper, to taste
Directions
In a large pan, over medium heat, add oil. Heat for one minute. Add onion, green pepper, red pepper, celery and garlic. Cook for 8 - 10 minutes, stirring frequently.
Add cayenne pepper, Andouille sausage and chicken. Cook for 5 minutes, stirring frequently.
Add tomatoes, rice and chicken broth. Mix well. Cook covered for 10 minutes.
Add shrimp. Mix well. Reduce heat to medium low and cook, covered for another 15 - 20 minutes or until borh rice and shrimp are cooked. Season with salt and pepper.
