Florentine Shrimp Scampi
We go to this recipe almost as much as the lingini and clams but this one may become our new favorite. This recipe has much more protein which helps while i am dieting.
Ingredients
1/2 pound penne, cooked
1 tablespoon olive oil
.7 ounce packet Italian dressing mix
1/2 cup dry white wine
9 ounces baby spinach
1 pound shrimp, peeled and deveined
grated parmesan cheese
Directions
In a 5 quart sauce pan, over medium heat, add olive oil, Italian dressing mix,and white wine. Cook for 10 minutes, stirring frequently.
Add baby spinach to pan. Mix well. Reduce heat to medium low and cook for 10 minutes, stirring occasionally.
Add shrimp to pan. Mix well. Cook for 10 minutes or until shrimp are pink.
Add penne to pan. Mix until pasta is completely coated with sauce. Cook for 10 minutes. Garnish each serving with grated parmesan cheese.
