Florentine Linquini and Clam Sauce
This is our go to recipe, especially on a Friday night when I don't feel like cooking. I just need to quick stops, one to the market for spinach, and one to the seafood store. There is no chopping or slicing, so there is minimal cleanup.
Ingredients
1/2 pound linguini, cooked
1 tablespoon olive oil
2 teaspoons minced garlic
.7 ounce packet Italian dressing mix
1/2 cup dry white wine
6 ounces baby spinach
1 pound chopped clams with juice
grated parmesan cheese
Directions
In a 5 quart sauce pan, over medium heat, add olive oil, minced garlic, Italian dressing mix,and white wine. Cook for 10 minutes, stirring frequently.
Add baby spinach to pan. Mix well. Reduce heat to medium low and cook for 10 minutes, stirring occasionally.
Add clams with juice to pan. Mix well. Cook for 5 minutes.
Add linguini to pan. Mix until pasta is completely coated with sauce. Cook for 10 minutes. Garnish each serving with grated parmesan cheese.
