Easy Paella
Making Paella is truly a labor of love. This is easier to prepare than the traditional Paella recipe but is still full of flavor. It is also a great recipe for people who can't get fresh shellfish.
Ingredients
1 pound boneless, skinless chicken thighs
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon granulated garlic
1 tablespoon olive oil
1 red pepper, chopped
1 sweet onion, chopped
8 ounces ground chorizo
2 cups yellow rice3 cups chicken broth
15 1/2 ounces diced tomatoes
2 pounds shrimp, peeled and deveined
Directions
Cut chicken into bite size pieces. Place chicken in a bowl. Add salt, pepper, garlic and olive oil. Mix until chicken is coated with seasoning.
In a large sauce pan, over medium high heat add chicken, peppers, and onions. Stir and cook for 5 minutes. Add chorizo. Stir and cook for 5 minutes.
Add rice, chicken broth, and diced tomatoes. Mix well. Bring to a boil. Reduce heat to medium low. Cook fo 20 minutes, covered.
Add shrimp to pan. Mix well. Cook for 10 ninutes, covered.
