Crab Cakes
I don't make crab cakes very often, but when I do they are really a treat. May crab cake recipes have Old Bay seasoning as an ingredient. I prefer mine without Old Bay, but a couple of teaspoons can definitely be added to this recipe.
Ingredients
2 eggs2 scallions, chopped
1 tablespoon Worcestershire sauce
1/2 tablespoon brown mustard2 teaspoons lemon juice4 tablespoons mayonnaise
1 cup panko bread crumbs
1 pound crabmeat (I use claw meat)
4 tablespoons butter
Directions
In a medium bowl add eggs, scallions, worcestershire sauce, mustard, lemon juice, and mayonnaise. Mix well. Add bread crumbs. Mix well.
Add crabmeat. Mix well. Refrigerate for at least 1 hour.
Shape into 8 patties.
In a large skillet, over medium high heat, melt 2 tablespoons butter. Place four crab cakes in skillet. Cook for 5 - 6 minutes on each side, until golden golden brown.
