Caramelized Tomato Baked Cod
I wanted to change up the recipe I have been using for cod, so I decided to cook the tomatoes and onions before placing them on the cod. The addition of sherry gives it a really nice flavor.
Ingredients
4 (6 ounce) cod loin
1 tablespoon olive oil
1 onion, chopped
1 pint grape tomatoes
1 teaspoon granulated garlic
1 teaspoon salt
1 teaspoon pepper
1/3 cup dry sherry
Directions
Place cod in a baking dish.
In a large saute pan, over medium heat, heat olive oil. Add onions, tomatoes, garlic, salt, and pepper. Cook for 5 minutes, stirring frequently. Smash the grape tomatoes. Add dry sherry to pan. Stir. Cook for 3 - 4 minutes.
Top each cod loin with 1/4 of the tomato mixture.
Bake at 375 for 30 minutes.
