Baked Stuffed Shrimp
My Mom and my husband love Baked Stuffed Shrimp so this is one of my go to recipes when Mom visits for a few days. My stuffing for the shrimp is very quick to make, so it is a recipe that is easy to make last minute. You can serve this with drawn butter but it really doesn't need it.
Ingredients
1 pound 13 - 15 shrimp, peeled, deveined and butterflied
4 tablespoons butter
2 tablespoons dry sherry
1 teaspoon granulated garlic
1 sleeve round butter crackers
Directions
Place shrimp in a baking dish with butterflied is down and lies flat.
In a small sauce pan, over medium heat, melt butter. Add sherry and granulated garlic. Stir. Cook for 5 minutes. Remove from heat.
Crush crackers until they are a fine powder. Add crackers to butter. Mix until cracker crumbs are completely mixed with the butter.
Place a 3/4 tablespoon of cracker stuffing on each shrimp. Bake at 375 for 20 minutes.
