Baked Cod
Cod is one of the easiest seafood products to find in New England. Many restaurants have it on their menu and it is served baked, fried, or pan seared. My husband and mother-in-law love baked cod so I make it every week, especially when my mother is over for dinner. Everyone is always a member of the clean plate club so no leftovers to worry about.
Ingredients
4 (6 ounce) cod loins
4 tablespoons butter
4 tablespoons dry sherry
1 teaspoon granulated garlic
1 sleeve round butter crackers
1/4 cup panko breadcrumbs
Directions
Place cod in a baking dish.
In a small sauce pan, over medium heat, melt butter. Add sherry and granulated garlic. Stir. Cook for 5 minutes. Remove from heat.
Crush crackers until they are a fine powder. Add crackers and bread crumbs to butter. Mix until cracker crumbs are completely mixed with the butter.
Place 1/4 of cracker stuffing on cod loin. Bake at 375 for 20 minutes.
