Vegan Alfredo Sauce
Ingredients
1 pound cauliflower florets
1/2 cup raw cashews
1 1/2 cups vegetable broth1 1/2 cups almond milk
1 teaspoon granulated garlic
1/2 teaspoon salt
1/2 teaspoon pepper
Directions
In a large sauce pan, add cauliflower, cashews, and vegetable broth. Bring to a boil. Reduce heat to medium low and simmer, covered, for 15 minutes.
Place contents of pan in a blender. Add almond milk, garlic, salt and pepper. Blend until smooth. Place contents of blender back into the sauce pan. Cook, uncovered, on medium low for 10 minutes. Sauce should thicken.
