Turkey and Lentil Bolognese Sauce
A friend asked me to make a spaghetti sauce with ground turkey. She didn't want it to be real saucy so I stayed away from using tomato sauce and added tomato paste to make it thicker. The lentils added a nice texture to the sauce.
Ingredients
1 tablespoon olive oil
1 carrot, diced
1 sweet onion, diced
1 pound ground turkey
2 teaspoons minced garlic
14 1/2 ounces diced tomatoes
6 ounces tomato paste15 1/2 ounces canned lentils, drained and rinsed
2 teaspoons salt1 teaspoon pepper1 tablespoon Italian herb mix
Directions
In a large sauce pan, over medium heat, heat oil. Add carrots, onions, and ground turkey. Cook for 10 minutes breaking up with a spoon until browned and crumbled.
Add garlic, diced tomatoes, tomato paste, lentils, salt, pepper, and Italian herb mix to ground turkey. Mix well until tomatoes are completely incorporated with turkey. Reduce heat to medium low and cook for 30 minutes.
Serve with cooked pasta or zucchini noodles.
