Roasted Red Pepper and Tomato Sauce
This combination of ingredients, along with the layer of flavor you get from roasting the vegetables, makes a delicious sauce. It is great with pasta, chicken, or as dip for your favorite crusty bread.
Ingredients
2 red peppers, stems and seeds removed
6 plum tomatoes, cut in half
1 small sweet onion, peeled and cut into quarters6 garlic cloves
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon pepper3 teaspoons Italian seasoning
Directions
Place pepper, tomatoes, onions, and garlic cloves in a bowl. Add olive oil, salt, and pepper. Mix so vegetable are lightly coated with oil. Place vegetable on a baking sheet. Bake at 400 for 30 minutes.
Place cooked vegetables in a food processor and blend until smooth.
Place blended vegetables in a sauce pan. Add Italian seasoning. Cook on low for 45 minutes, stirring occasionally.
